Käse-Kartoffel-Tortilla-Auflauf mit Speck

  • Prep Time: 15 minutes
  • Cook Time: 30 minutes
  • Total Time: 45 minutes

Ingredients

  • Potatoes: 2 medium-sized (about 400 g / 14 oz)
  • Water: Enough to cover the potatoes
  • Salt: To taste
  • Vegetable Oil: 1 tablespoon
  • Bacon: 100 g (3.5 oz), diced
  • Onion: 1 medium, chopped
  • Black Pepper: To taste
  • Tortilla or Pita Bread: 2 large
  • Mozzarella Cheese: 150 g (1½ cups), shredded

Step-by-Step Cooking Directions

1. Prepare the Potatoes
Peel the potatoes and cut them into small cubes. Add the potato cubes to a pot and cover them with water. Bring the water to a boil, add salt to taste, and cook the potatoes for about 15 minutes, or until they’re tender. Once done, drain the water and set the potatoes aside.

2. Cook the Bacon and Onion
Heat the vegetable oil in a skillet over medium heat. Add the diced bacon and cook until crispy, stirring occasionally. Once the bacon is cooked, add the chopped onion to the skillet and sauté until it becomes golden and fragrant. This will add sweetness and depth to the dish.

3. Add the Potatoes to the Skillet
Now, add the boiled potatoes to the skillet with the bacon and onions. Season the mixture with black pepper, to taste, and stir everything together to combine. Cook for an additional 2-3 minutes to allow the flavors to meld together.

4. Layer the Tortilla Bake
Preheat your oven to 180°C (350°F). Place one tortilla or pita bread on a baking sheet or in a round baking dish. Spread half of the potato-bacon mixture evenly over the tortilla, ensuring it covers the entire surface. Then, sprinkle half of the shredded mozzarella cheese on top of the mixture.

5. Add the Second Layer
Place the second tortilla or pita bread on top of the first layer. Add the remaining potato-bacon mixture and top with the remaining mozzarella cheese. This double layer ensures the dish is cheesy, hearty, and filling.

6. Bake
Place the baking sheet or dish in the preheated oven and bake for 15 minutes, or until the cheese is melted, bubbly, and slightly golden on top. The tortillas will crisp up, creating a delicious contrast in texture with the soft, cheesy filling.

7. Serve
Once baked, remove the dish from the oven and allow it to cool slightly before slicing it into wedges. Serve warm, and enjoy the cheesy, savory goodness.
